Honey and Rye's Butter Cookies

Yields: 1.5 dozen

1 cup powdered sugar
1 cup plus 3T unsalted Hope butter, room temp
1 egg yolk
2 teaspoon salt
½ teaspoon vanilla extract
2 ⅓ cup all purpose flour

½ cup granulated sugar, for rolling



DIRECTIONS

  • Preheat oven to 350
  • In a large bowl or a stand mixer fitted with the paddle attachment, combine powdered sugar, butter, yolk, salt & vanilla. Cream until light and smooth.
  • Add flour and mix until fully incorporated.
  • Scoop approximately 2T of dough into balls and roll in granulated sugar
  • Press flat with cookie stamp, bottom of a glass, or your hand
  • Place cookies on parchment lined baking sheet
  • Bake for 12-14 minutes, rotating halfway through

Lemon Bars

Crust:
1 c Hope butter (soft)
2 c flour
1/2 c powdered sugar

Filling:
2 c sugar
4 T flour
1 t baking powder
4 eggs (slightly beaten)
6 T lemon juice (about 2 lemons)




  • Pre-heat oven to 350
  • Mix crust (mixer is best) and press into a 9x13 pan -- bottom and sides
  • Bake for 15 min or until lightly browned -- cool slightly
  • Mix filling and pour over crust
  • Bake about 25 min
  • Cool about 15 min, loosen sides and sprinkle with powdered sugar
  • When completely cool cut into squares
